The Issue with Traditional Maturation
Traditional barrel aging is time-consuming, expensive, space-intensive, and heavily reliant on natural evaporation (the “angel’s share”). It also comes with a sizeable environmental footprint, as it demands significant resources; most notably, wood, space, and time.
